Dragon fruit - what is it?
Its name may make you shiver, but the exotic fruit from Central America is really not that dangerous. In fact, we think it's quite an eye-catcher. The dragon fruit, also known as pitaya, comes from the cactus family and is mainly cultivated in Colombia, Nicaragua, Thailand, Vietnam and China. However, the colourful fruit has also been making a name for itself in Europe and has found a regular place in many cafés. We are not surprised, because the dragon fruit not only convinces with its pop of colour, but also with its taste.
Advantages of dried dragon fruit

We love the taste of dragon fruit, however, with a water content of around 90 %, the taste of dragon fruit is sometimes a little too mild for us. That's why we have subjected our exotic favourite to a drying process to minimise the water content - and thus maximise the taste. The result: a special kind of taste experience! Varieties & Origin

The red dragon fruit, also called pitahaya, has a bright pink flesh that resembles that of a kiwi, because it contains countless small seeds. Refreshingly sweet, it is milder than its yellow variant. In the picture you can see the dried version of the fruit, which tastes exotic, sweet and tart, and has a delicate texture.

Pitaya has its origins in the tropical climates of Central America, where it finds ideal conditions, as it needs temperatures around 35 to 40°C to thrive. Thanks to its tropical climate, many Asian countries are therefore also suitable for growing dragon fruit, which is nowadays it is also grown in China, Vietnam, Sri Lanka and Thailand. But this curious looking fruit is also successfully cultivated in Israel. The exact figures of the global production are not known, so the numbers you can see on this map are only an estimate.
